Scallop Kabobs Italian Style Recipe

Ingredients

  • 36 sea scallops or possibly 1 pound
  • 1 (5 ounce) pkg. lean smoked ham, cut in 36 (1/2 inch wide) strips
  • Vegetable cook spray
  • 2 garlic cloves or possibly chopped
  • 1/4 c. lemon juice
  • 2 T chopped fresh parsley
  • 3/4 teaspoon dry whole oregano

Directions

  1. Wrap each scallop with strips of ham. Place 6 scallops on each skewer and set aside.Coat a small frying pan with spray. Place on medium heat. Add in garlic; saute till browned. Remove form heat and stir in lemon juice, parsley, oregano. Coat the grill rack with spray. Place on grill and cook about 9 min. Serve warm. Serves about 6. Serve with potato salad, bread and sherbet as dessert.
