When I was a teenager, my step-father made a dish he called Posse Stew. Basically it consisted of browned ground beef and several cans of vegetables and kidney beans. Since then I have changed the recipe some to suit my family's tastes (no kidney beans for sure!) and it has become one of my favorite comfort foods. The recipe is incredibly simple and can be easily tweaked to suit your own personal preferences. It's great for one of those nights when you forgot to thaw something out for dinner or are just feeling tired and don't really want to spend a lot of time in the kitchen. Hope you enjoy!

  • 1-1/4 to 1-1/2 lbs.Hamburger meat
  • 1 medium onion, chopped
  • 1 can Green Beans
  • 1 can crushed Tomatoes
  • 1 can whole-kernel Corn
  • 1 can sliced Mushrooms, drained
  • 1 can mixed Vegetables
  • 1 can Black Beans, drained and rinsed
  • Salt and Pepper, to taste

Directions

  1. Brown the hamburger meat. About halfway though add the onions. By the time the hamburger meat is done, the onions should be soft and translucent. Drain off the excess grease.
  2. Put the drained meat mixture back into the pan and add the canned vegetables. Drain the mushrooms. Drain and rinse the black beans. There is no need to drain the remaining vegetables.
  3. Stir the ingredients together to thoroughly mix them in the pan. Add salt and pepper to taste. Turn the burner on to med-low and allow the stew to simmer for 30 minutes to an hour (this recipe would also work great in a slow cooker). I like to let it cook long enough to make sure that the vegetables are soft, especially the black beans, and the flavors start blending.
  4. If more liquid is needed during cooking, add either water or beef stock.
