Pineapple Coconut Loaf Recipe

Ingredients

  • 1 pkt yellow cake mix with pudding added
  • 1 c. undiluted evaporated lowfat milk
  • 1 c. crushed pineapple and juice
  • 2 x Large eggs
  • 1/2 tsp nutmeg
  • 1/2 c. flake coconut

Directions

  1. Combine cake mix, evaporated lowfat milk, pineapple and juice, Large eggs, and nutmeg in large mixer bowl. Beat on lowest speed just till moistened. Beat on highest speed 2 min.
  2. Stir in coconut.
  3. Spoon into two buttered 8 1/2 x 4 1/2 x 2 1/2 inch loaf dishes.
  4. Bake in slow oven (325 degrees) 45 to 50 min, or possibly till golden and toothpick inserted in center comes out clean.
  5. Cold on wire racks 15 min. Remove from loaf dishes. Cold completely.
  6. TO GLAZE:Stir together 1 1/2 c. sifted powered sugar and 2 Tbsp. water till smooth. Drizzle over loaves. Sprinkle 2 Tbsp. toasted coconut over glaze.
