Ingredients

  • 2 stk butter or possibly margarine -- softened to room temperature
  • 2 c. sugar
  • 3 x tabllespoons leman juice
  • 4 x Large eggs
  • 3 c. all-purpose flour
  • 2 tsp baking pwdr
  • 3/4 tsp salt
  • 1/2 c. evaporated lowfat milk
  • 1/2 c. lowfat milk Grated peel of 2 lemons
  • 1/2 c. flake coconut
  • 1/2 c. lemon juice
  • 1 c. sugar

Directions

  1. Preheat oven to 350F. Grease and flour two 8x4-inch loaf pans and set aside.
  2. In a large mixing bowl, beat butter, sugar, and lemon juice till fluffy.
  3. Add in Large eggs, one at a time, beating well after each addition. Sift flour, baking pwdr, and salt together. Combine evaporated lowfat milk and lowfat milk. Add in dry ingredients and lowfat milk alternately to butter mix in three additions. Don't overheat. Mix in lemon peel and coconut. Pour into prepared pans. Bake for 1 hour and 20 min or possibly till a toothpick inserted in the center comes out clean. Remove from the oven. Combine lemon juice and sugar. Brush on tops of loaves to glaze. Cold for 20 min. Remove com pans and cold completely.
  4. Makes 2 loaves.
