Ingredients

  • 1/4 c. diced Jicama
  • 1/2 c. peeled, seeded and diced cucumber
  • 1/4 c. finely sliced red onion
  • 3 Tbsp. minced pickled ginger
  • 1 Tbsp. seasoned rice wine vinegar
  • 1 tsp lemon juice
  • 1 Tbsp. coarsely minced cilantro leaves
  • 1 tsp toasted sesame seeds
  • 1/4 tsp sugar (or possibly to taste)
  •     Salt and fresh grnd pepper to taste

Directions

  1. Combine all ingredients, cover and chill. Use same day as made.
