Ingredients

  • 1 Tbsp. Extra virgin olive oil
  • 15 gm Butter, (1/2 ounce)
  • 1 x Onion, minced
  • 1 x Red pepper, sliced
  • 250 gm Pack 5 cheese tortellini
  • 1 x 70 grams pac pancetta, cubed
  • 1 x 142 millilit single cream, (5 fl ounce)
  • 1 tsp Cornflour with a little cool water
  •     Salt and freshly grnd black pepper

Directions

  1. Heat the oil and butter in a saucepan, add in the onion and cook for 5-6 min.
  2. Add in the pepper and cook for a further 10 min, stirring occasionally.
  3. Cook the pasta following pack instructions.
  4. Add in the pancetta to the onion and pepper mix and cook for 5-6 min.
  5. Pour in the cream, blended cornflour and add in seasoning to taste. Cook for a further 2 - 3 min.
  6. Drain the tortellini, add in to the pancetta mix and stir well to combine.
  7. Serve immediately
  8. NOTES : A delicious blend of cheeses combined with pasta - a lovely quick supper dish for 2. Serve with crusty bread and salad.
