%20browned%20with%20enough%20milk%20added%20to%20make%20a%20gravy.%20%20Could%20we%20get%20anymore%20peasant-like%20than%20that?%3C/p%3E%3Cp%3EAnother%20simple%20supper%20was%20potato%20soup.%20%20%20Mom%E2%80%99s%20soup%20was%20simply%20cooked%20potatoes,%20bacon,%20bacon%20fat,%20onions%20and%20milk.%20%20%20I%20remember%20it%20fondly.%3C/p%3E%3Cp%3EOkie%20Peasant%20Potato%20Soup%3C/p%3E%3Cp%3Ebased%20on%20Mom%E2%80%99s%3C/p%3E%3Cp%3ECook%20bacon%20crisp%20and%20reserve%202%20tablespoons%20of%20the%20bacon%20fat.%20%20Crumble%20bacon%20and%20set%20aside.%3C/p%3E%3Cp%3EPlace%20potatoes,%20carrots,%20dried%20shallots%20and%20chicken%20broth%20in%20a%20large%20sauce%20pan%20and%20bring%20to%20a%20boil.%20%20%20Cook%20until%20carrots%20and%20potatoes%20are%20tender,%20about%2010%20minutes.%3C/p%3E%3Cp%3EIn%20a%20smaller%20sauce%20pan,%20make%20a%20white%20sauce.%20%20%20%20Heat%20bacon%20fat%20and%20lightly%20saut%C3%A9%20garlic.%20%20%20(Do%20not%20over%20cook.)%20%20%20Add%20%20the%20flour%20and%20whisk%20until%20mixture%20bubbles%20so%20you%20know%20the%20flour%20will%20not%20taste%20raw.%20Carefully%20whisk%20in%20milk%20to%20make%20a%20sauce.%20%20%20Cook%20to%20a%20simmer%20and%20then%20remove%20from%20heat.%20Season%20with%20salt%20and%20pepper.%3C/p%3E%3Cp%3EWhisk%20sauce%20into%20the%20potato%20mixture.%20%20%20Stir%20until%20smooth,%20leaving%20chunks%20of%20potato%20and%20carrots.%20%20%20Add%20bacon.%20%20%20Adjust%20seasonings.%3C/p%3E%3Cp%3EServe.%20%20%20Garnish%20with%20cheese.%3C/p%3E%3Cp%3EMakes%20about%206%20servings.%3C/p%3E%3Cp%3EMom%20used%20perhaps%20more%20bacon%20fat%20and%20saut%C3%A9d%20lots%20of%20onions.%20%20%20Since%20we%20were%20iced%20in%20these%20last%20couple%20of%20days,%20I%20only%20had%20dried%20shallots.%20%20%20Mom%E2%80%99s%20recipe%20was%20also%20sans%20carrots%20but%20I%20added%20them%20anyway.%20%20Now,%20could%20you%20make%20this%20soup%20without%20the%20bacon%20fat?%20%20%20Sure,%20you%20could%20substitute%20butter%20or%20olive%20oil%20but%20let%20me%20tell%20you%E2%80%94it%20wouldn%E2%80%99t%20be%20as%20good!%3C/p%3E%3Cp%3EMom%E2%80%99s%20potato%20soup%3C/p%3E%3Cp%3EGrowing%20up,%20we%20really%20didn%E2%80%99t%20think%20of%20ourselves%20as%20poor.%20%20%20We%20were%20just%20like%20most%20kids%20in%20our%20community%20and%20probably%20better%20off%20than%20some.%20%20%20(Our%20school%20was%20100%25%20free/reduced%20lunches%20so%20if%20you%20know%20anything%20about%20the%20federal%20child%20nutrition%20program,%20you%20know%20that%20most%20of%20the%20families%20were%20at%20the%20poverty%20level.)%20%20%20It%20wasn%E2%80%99t%20until%20a%20year%20or%20two%20out%20of%20college%20that%20Dad%20sat%20me%20down%20to%20say%20how%20much%20he%20appreciated%20me%20working%20my%20way%20through%20school%20because%20he%20prayed%20that%20I%20wouldn%E2%80%99t%20have%20to%20ask%20for%20money%20when%20I%20was%20visiting%20on%20the%20weekends.%20There%20was%20usually%20none%20to%20be%20had.%3C/p%3E%3Cp%3EI%20guess%20this%20is%20an%20homage%20to%20my%20parents%20(and%20the%20parents%20of%20most%20of%20my%20friends)%20who%20kept%20our%20poverty%20from%20us%20and%20made%20us%20feel%20like%20normal%20kids%20with%20nothing%20to%20be%20ashamed%20of.%3C/p%3E%3Cp%3EWe%20thought%20we%20were%20eating%20just%20fine%20as%20we%20feasted%20on%20hamburger%20gravy%20and%20potato%20soup.%3C/p%3E%3Cp%3EEven%20the%20leftovers%20are%20good!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
