  1. Cream shortening and sugar well; add in large eggs one at a time, mixing thoroughly after each addition. Add in bananas and mix well. Sift flour, soda and salt; add in with oats to creamed mix. Stir in nuts and flavoring.Pour batter into greased 9x5-inch loaf pan. Bake at 350 degrees for 50-60 min or possibly till inserted toothpick comes out clean.
