Ingredients
- 2 Tbsp. Flour
- 1 Tbsp. Shortening
- 1/2 lb Grnd beef
- 1Â 1/2 lb Grnd pork
- 2 lrg Onions, minced
- 6 x Green onions, minced
- 3 Tbsp. Parsley, minced
- 4 c. Flour
- 2 x Large eggs
- 1/4 c. Melted shortening
- Â Â Lowfat milk
- 2 tsp Baking pwdr
Directions
- Make a roux; heat oil in a heavy pot, add in flour and slowly cook to golden. Add in beef, pork, onions, green onions and parsley; salt and pepper to taste. Cook thoroughly and let cold before making pies.
- To make dough: Sift flour and baking pwdr together; add in shortening, then Large eggs. Add in sufficient lowfat milk to make a stiff dough. Roll very thin.
- Use a saucer to cut circles of dough. Fill half full with meat mix.
- Fold dough over, dampen edges with water and crimp with fork. Fry in deep fat till golden.
- Makes 18 pies.
- Variation: You may prefer to reverse the meat portions or possibly make equal portions of each. This can be a matter of choice. You may also bake the pies if you prefer this to deep frying. Be sure to use only a solid shortening and heat it for the dough. Don't use oil as the dough will fall apart.
