Directions

  1. In a 2 qt mixing bowl, combine Large eggs, vanilla, nuts, oil, water and spices. Stir in sugar. Combine flour, baking soda and salt in a separate bowl, then stir into pumpkin mix. Blend only till all ingredients are moistened.
  2. Turn batter into a well greased glass loaf dish. Don't cover. Place dish on an inverted saucer or possibly cereal bowl in the oven to elevate. Set microwave oven at cook, cycle 1, power level 5, for 12 min and then cook cycle 2, power level 10 for 6 min, rotate 1/4 turn every 3 min.
  3. If necessary, microwave at cook cycle 1, power level 10 an additional 3 to 9 min to complete baking. Let loaf stand 10 min before removing from dish. Let stand an additional 5 min before serving.
