Ingredients
- 6 sm. potatoes, cooked
- 1/4 c. onion, finely minced
- 3 c. zucchini, diced
- 12 cherry tomatoes, halved
- 4 tbsp. lemon juice
- 4 tbsp. salad oil
- 2 teaspoon basil leaves
- 1 1/2 teaspoon salt
- 1/4 teaspoon garlic pwdr
- 1/2 teaspoon pepper
Directions
- Cook potatoes; drain and chill. Cube potatoes and combine with onions, zucchini and tomatoes and toss lightly.
- Combine remaining ingredients in separate bowl and blend. Pour dressing over potato mix and toss gently. Chill. Serves 6.
