Yummy Greek flavors in nacho form. Instead of sour cream you could use some tzatziki sauce or slice some raw baby spinach leaves. You can also use a flavored feta cheese if you like. To make a heartier dish you can add some shredded chicken or tuna to the tomato mixture.
Ingredients
- 2 Tablespoons finely chopped kalamata olives
- 2 Tablespoons finely chopped sun-dried tomatoes in oil
- 2 teaspoons oil from the sun-dried tomato jar
- 1 small plum tomato, seeded and chopped
- 1 medium green onion, thinly sliced approx. a Tbsp
- 4oz restaurant style tortilla chips approx 35
- 4oz feta cheese, finely crumbled (1 cup)
- Tzatziki and or chopped raw baby spinach if you like
Directions
- In a small bowl, mix olives, sundried tomatoes, oil, plum tomato and onion and set aside.
- On microwavable plate. arrange tortilla chips in a single layer. Top evenly with the cheese. Microwave uncovered on high for 1 minute. Rotate plate and cook for another 30-60 seconds till cheese is melted.
- Spoon tomato mixture evenly over chips and cheese
