Easy Breakfast Oatmeal Muffins w/ Chocolate chips and Coconut Recipe

This is a great recipe for a fast breakfast, after school snack or anytime. They are fast and easy to make and you can freeze them for a grab and go snack. You can add whatever you like to them. Chopped nuts, raisins, dried fruits, wheat germ or granola.

Directions

  1. Preheat oven to 375
  2. Line cupcake or muffin tins with papers
  3. In a large bowl add rolled oats, salt, cinnamon and mix together
  4. Pour water over oats
  5. In another bowl add mashed banana, honey, veg oil and vanilla, mix well.
  6. Add banana mixture to the oats mix well, then add chocolate chips and coconut, stir.
  7. Fill muffins papers almost to the top.
  8. Bake 18-22 mins, let cool.

      We love baked oatmeal. We make it with all kinds of fruit, usually what ever we have in at the time, But this one my son just loves and he says can I have a "cupcake" for a snack? He sees it as a treat, YAY!
