Cucumber Salad (vinegar style) Recipe

My mom's been making this since we were little, it so refreshing in the summer time. It's basic and simple and great at picnics and bbq's and with no mayo in it won't spoil in the summer heat.

Ingredients

  • 3 large cucumbers very thinly sliced
  • 1 large sweet onion very thinly sliced
  • 3/4 cup water
  • 3/4 cup sugar
  • 3/4 cup vinegar

Directions

  1. Place thinly sliced cucumber and onion in a lg bowl.
  2. Mix water, sugar and vinegar in a bowl, whisk till sugar is mixed in
  3. Pour over the cucumbers, stir well
  4. Marinate in the fridge for several hours to a few days
  5. The longer it sits the better it tastes!

    I agree with you, these are the best. I have the same recipe but my mom called it refrigerator pickles. I added "The Best" in front of it because it's true. LOL The only difference between your's and mine, I use celery seed; sometimes I'll use dill and a bit of garlic for a different flavor profile. Most people, like me would eat these like it's a salad...
    I've cooked/tasted this recipe!
