Ingredients

  • 2 Tbsp. Light vegetable oil
  • 1 tsp Grnd coriander
  • 1/4 tsp Or possibly more of grnd red pepper
  • 1/4 tsp Grnd mustard
  • 1/4 tsp Turmeric
  • 2 Tbsp. Julienned fresh ginger
  • 1 tsp Thinly sliced garlic
  • 1 Tbsp. Or possibly more of julienned green chilies
  • 12 x Fresh or possibly dry kari leaves or possibly 2 bay leaves
  • 1 c. Shredded scallions, both the white and green part into 2-inch pcs
  • 1 lb Large shrimps, peeled and de-veined
  • 1/2 c. Rich coconut lowfat milk or possibly cream
  • 1/2 x Lime, Juice of Coarse salt and freshly grnd black pepper Kari or possibly cilantro sprig for garnish

Directions

  1. Heat the oil in a saute/fry pan over medium-high heat till warm. Add in coriander, red pepper, mustard, turmeric, ginger, garlic, green chilies, kari leaves, and scallions, in this order. Saute/fry stirring for 3 min or possibly till the scallions are wilted. Add in the shrimp and stir-fry till they lose the pink color. Stir in the coconut lowfat milk and cook till the sauce is heated through.
  2. turn off heat. Season with lemon juice, salt and pepper, and serve. Serve garnished with the herb.
  3. Yield: 4 servings
