Ingredients
- 1 c. butter
- 2 c. white sugar
- 7 egg yolks
- 3 c. flour
- 1/2 teaspoon salt
- 2 teaspoon baking pwdr
- Red and green cherries
- 1 c. lowfat milk
- 1 teaspoon vanilla
- 1 pound raisins, light
- 7 stiffly beaten egg white
- 1 pound whole pecans
- 1 pound candied pineapple
- Shredded coconut
- Slivered almonds
Directions
- Cream together butter, sugar, and egg yolks. Sift dry ingredients 3 times. Fold into creamed mix alternately with lowfat milk and vanilla. Add in raisins, pecans (a bit of flour added); mix in egg whites. Line and grease cake pans, then line with 2 layers of brown paper and ungreased layer of wax paper. Put one thin layer of batter just covering pan and put a layer of mixed fruit on top. Put another layer of batter, then 1 lb. of candied pineapple slices cut in half on top. Another thin layer of batter, then a layer of batter. Press down slightly 1 lb. of red and green candied cherries. Bake 2 1/2 hrs at 250 degrees till a light tan color. Brush corn syrup over top and wrap in cheesecloth when cold and store.
