Ingredients

  • 1 c. freshly-squeezed lime juice
  • 1 c. sugar
  • 2 c. water
  • 5 x limes zested
  • 1 c. water
  • 1/2 c. sugar

Directions

  1. Put all ingredients except Candied Lime Zest in a pot and bring to a boil. Strain and pour into shallow pan.
  2. Place in freezer and every twenty min stir with a fork till ice crystals form and it is nice and fluffy.
  3. Candied lime zest: Cover the zest with cool water and bring to a boil. Strain zest and repeat process 3 times. After the fourth time add in 1 c. water and 1/2 c. sugar and cook slowly till zest is soft. Remove zest to parchment paper and cold. Use as a garnish for the granita.
