This is a simple to prepare salad that tastes great and is just perfect for summer.

Ingredients

  • 6 large potatoes – I used Yukon Gold potato’s
  • ½ cup fresh parsley
  • 3 cloves garlic – chopped
  • Zest of 1 lemon
  • Juice of ½ lemon
  • Dashes of black pepper
  • ½ cup of olive oil

Directions

  1. Boil potatoes until they are fork tender. Let the potatoes cool and then quarter them.
  2. Add the chopped parsley, lemon zest, garlic and pepper. Add the olive oil and lemon juice and toss.
