  • 1 1/4 c. graham-cracker crumbs
  • 6 Tbsp. unsalted butter melted, cooled
  • 3 Tbsp. granulated sugar
  • 1 pch salt
  • 1 can sweetened condensed lowfat milk - (14 ounce)
  • 4 x egg yolks
  • 1/2 c. fresh key-lime juice
  • 1 Tbsp. grated key-lime rind
  • 3/4 c. heavy cream chilled


  1. Heat oven to 375 degrees. Combine graham-cracker crumbs, butter, sugar, and salt in a medium bowl, and mix well. Press into a buttered 8-inch pie plate, and bake 15 min, till lightly browned. Let cold completely on a wire rack.
  2. In a mixing bowl, combine condensed lowfat milk, egg yolks, lime juice, and rind. Pour into the prepared, cooled crust. Lower oven to 325 degrees. Return pie to oven, and bake approximately 15 to 17 min, till the center is set but still quivers when the pan is nudged. Remove from oven, and let stand till cold.
  3. Shortly before serving, whip cream till stiffened. Decorate pie with whipped cream, and serve at room temperature.
  4. Makes 1 pie.
