My own creation using my jalapeno garlic clarified butter. It puts a southwest/spice twist on eggs benedict.

  • 2egg yolks
  • 1/2 lemon juice
  • 1/2cup jalapeno butter melted
  • 1/2 tspn tabasco sauce
  • salt tt
  • pepper tt
  • water incase it thinkens up on you. If you have to usse a lil water just splash it, it goes a long way.

Directions

  1. 1. temper yolks in a bowl over a steam bath wisking constantly until thinkens a lil bit. If yolks start to scramble or harden romove from heat.
  2. 2. When yolks have thickend up a little bit add lemon juice, while wisking add butter slowly to prevent cooking eggs more.
  3. 3 add tabasco, salt, and pepper. Also add your water if needed
