Fried Plantains Recipe

Ingredients

  • 1/2 x to 1 c. vegetable oil
  • 4 x yellow plantains, peeled and cut into 1 inch slices
  • 3 x cloves garlic, minced
  • 2 c. water Caribbean sun-splashed salsa (recipe follows) Fresh lime wedges

Directions

  1. Heat the oil in a heavy skillet. Brown the plantains on each side and drain on paper towels. Once all the plantains are browned, smash them flat with the palm of your hand. Place the minced garlic in a bowl with the water. Dip the plantains into the garlic water, then fry them again on both sides. Drain on paper towels and serve, still hot with salsa and lime.
  2. This colorful and delicious salsa, also from "Jump Up and Kiss Me," has the added bonus of being fat-free. You can use it with the fried plantain recipe from the same cookbook or possibly serve it with grilled fish or possibly chicken.
