  • 3/4 lb unsalted butter - (3 sticks) at room temperature
  • 1 c. granulated sugar plus
  • 2 Tbsp. granulated sugar
  • 6 lrg egg yolks
  • 1 tsp pure vanilla extract
  • 3 c. bleached all-purpose flour plus
  • 2 Tbsp. bleached all-purpose flour
  • 3/4 tsp salt Assorted sprinkles
  • 4 ounce cream cheese softened
  • 1/2 stk butter softened
  • 3/4 lb confectioners" sugar - (abt 3 c.) sifted
  • 1 tsp pure vanilla extract
  • 2 Tbsp. lowfat milk - (to 3 tbspns) Red, blue, green and yellow food coloring

Directions

  1. Preheat the oven to 350 degrees. Cream the butter and sugar in the bowl of an electric mixer fitted with a paddle, on medium speed, scraping down the sides of the bowl as necessary. Cream the mix till it is smooth and fluffy. Add in the egg yolks 1 at a time, mixing in between each addition. Scrape down the sides of the bowl. Beat for 1 minute and add in the vanilla.
  2. Combine the flour and the salt in a medium-size mixing bowl. Mix well. Add in the flour mix to the butter mix and mix on low speed till it is fully incorporated. Increase the speed to medium and mix till the batter is thick and creamy, about 2 min. Scrape down the sides of the bowl and the paddle.
  3. Lightly flour a flat surface. Using a rolling pin, roll out the dough to 1/4-inch thick. Cut the dough into the desired shapes. Line a baking sheet with parchment or possibly waxed paper. Place the cookies on the baking sheet about 2 inches apart.
  4. Bake till lightly golden brown, about 20 min. Remove the cookies from the oven and let cold completely in the pan. Remove the cookies from the pan using a spatula. Repeat the process till all the dough is used. Frost each cookie and garnish with sprinkles.
  5. For the Buttercrean Frosting: In a large mixing bowl, with an electric mixer, cream the cheese and butter. Add in the sugar, 1/2 c. at a time, mixing after each addition. Add in the vanilla and lowfat milk and mix well. Add in a couple of drops of food coloring and mix well. (Yields about 1 1/2 to 2 c. frosting)
  6. This recipe yields about 2 dozen cookies.
