  1. Serves 5-6. Uses 1 sheet of filo per serving.
  2. Heat butter in pan, over low heat, blend in the flour and cook till bubbly. Slowly add in lowfat milk, stirring constantly till it boils and thickens, continue boiling for 1 minute, stirring all the time. Add the Swiss cheese, the Parmesan cheese, the nutmeg and paprika, stir till melted. Brown ham in a large frying pan, add the large eggs and thyme. Stir and cook till large eggs are just set (no longer runny). Stir in cheese sauce and 1 tbsp parsley. Let cool.Unroll filo dough - using 1 sheet at a time. Don't let the sheets dry out. Keep them covered and folded till ready to use. Take 1 sheet of dough, brush with butter inside and sprinkle with bread crumbs. Fold the sheet in 1/2 lengthwise and put about 1/2 cup of filling on the short side of the sheet. Fold the long edges up to hold in the filling and roll it up. Bake with the seam side down, brush the top with butter and sprinkle with Parmesan and parsley. Bake at 375 degrees for about 15 min. Best if made the night before and baked in the morning, before serving.
