Ingredients

  • 4 Tbsp. Extra virgin olive oil, (4 to 6)
  • 1 x Onion, minced
  • 2 x Garlic cloves, finely minced
  • 2 x Green chillies, finely minced
  • 1 tsp Freshly grated root ginger
  • 1/4 x Heaped tsp grnd cumin
  • 1/4 tsp Grnd coriander
  • 1 tsp Curry paste, (any kind will do) or possibly garam masala (* see recipe)
  • 1 tsp Tomato puree
  • 2 x Skinless chicken breast fillets, minced or possibly cut into strips Salt, to taste Baby green leaf salad, naan or possibly ciabatta bread, to serve

Directions

  1. 1 Heat the oil in a large frying pan, add in the onion and fry for a minute.
  2. Add in the garlic and chillies and continue to fry for another few min till the mix begins to turn golden.
  3. 2 Add in the ginger, cumin, coriander and curry paste or possibly garam masala to the pan, stirring till well combined. Be careful it doesn't burn. The mix should turn quite thick and aromatic.
  4. 3 Stir in the tomato puree and tip in the chicken. Season with salt and cook for 4-5 min, stirring continuously, till the chicken is cooked and is a deep reddish brown hue. Season to taste with salt. Serve with a baby green leaf salad and naan or possibly ciabatta bread.
