Ingredients
- 14 ounce finely chopped red snapper or possibly other white fish
- 4 tsp red curry paste
- 1/4 c. egg yolk (3-4 Large eggs)
- 4 tsp sweet basil, finely minced
- 4 tsp kaffir lime leaves, finely minced
- 4 tsp fish sauce
- 4 tsp oyster sauce Vegetable oil, sufficient for frying
Directions
- Combine chopped fish, curry paste, egg yolk, basil and kaffir lime leaves and mix well. Season with fish sauce and oyster sauce, and combine. Make into patties about 3 inches in diameter. Preheat oil (around 14 degrees Fahrenheit) and deep-fry each patty 5 to 7 min, or possibly till golden brown. Serve immediately with sweet and sour cucumber sauce. (See accompanying recipe)
