Ingredients

  • 1 x Beef roast (Avoid cheaper, less tender cuts)
  • 1/2 c. Unsalted butter
  • 2 tsp Steak spice
  • 2 tsp Dry mustard
  • 1 c. Dry red wine
  • 1 med Onion, thinly sliced

Directions

  1. Preheat oven to 450F.
  2. In a bowl, heat the butter. Blend in the steak spices and dry mustard.
  3. Place roast in a roasting pan and pour the melted butter mix on top of the meat. Roast 15 min at 450F. Then turn oven down to 425F and continue roasting for 15 min per lb. (this will yield a medium-rare roast).
  4. Fifteen min before roasting time is up, pour the red wine into the roasting pan and add in the onion slices around the meat.
  5. Let the roast rest at room temperature for about 10 min before slicing.
  6. Serve slices topped with pan gravy and onions.
  7. NOTES : The better the cut of meat, the better the results, so get the best beef roast which you can afford. You may add in more onion slices if desired a lot of onions in the gravy.
