Crock Pot Irish Tribute Recipe

I think we all know that cabbage and potatoes are part of the Irish food heritage. But, shrimp, or “prawns” as they are more often called in Ireland, are common in their diet too. I’m sure our regulars know that I’m a shrimp fanatic so I thought I’d fix up something in the crock pot in honor of the upcoming St. Patrick’s Day using shrimp instead of corned beef.

Directions

  1. Cooking oil spray
  2. Chop cabbage into small wedges.
  3. Wash, but don’t peel potatoes, and cut into quarters.
  4. Peel onions and cut into 8ths.
  5. Toss all ingredients except shrimp in a large bowl until everything is coated with oil.
  6. Spray crock pot with oil.
  7. Put mixture into the crock pot and cook on high for 3½ – 4 hours or until the potatoes are almost done.
  8. Add shrimp, stir and cook 20 more minutes.
