Ingredients

  • 2 egg yolks
  • 1 1/4 c. lowfat milk
  • 1/3 c. veg. oil
  • 3 tbsp. sugar
  • 1 teaspoon salt
  • 1 1/2 c. sifted flour
  • 2 teaspoon baking pwdr
  • 2 egg whites, stiffly beaten (don't use blender)

Directions

  1. In a blender, combine first 5 ingredients; mix well 2-3 seconds. Add in flour and baking pwdr; blend 8-10 seconds. Don't overbeat. Pour into mixing bowl; mix in beaten egg whites. Pour as needed into preheated waffle iron. Bake makes 3 squares 9 inch waffles.
