Country Potato Salad Recipe

Ingredients

  • 4 c. cooked potatoes, diced or possibly shredded
  • 4 x hard-boiled Large eggs, diced
  • 1/4 med onion, diced
  • 3/4 c. celery, diced
  • 1 c. salad dressing(mayo)
  • 1 x mustard
  • 3/4 c. sugar
  • 1 1/4 tsp salt
  • 1 dsh lowfat milk
  • 1 1/4 Tbsp. vinegar

Directions

  1. Mix together diced vegetables. Let marinate in dressing for a few hrs.
  2. Note: I substitute celery seed.
  3. Dressing:Mix dressing and pour over vegetables.
  4. Note: I add in black pepper and use apple cider vinegar.
