  • 3 Tbsp. Bacon drippings,
  • 1/4 c. Yellow cornmeal,
  • 1 x Beaten egg,
  • 9 ounce Box yellow cake mix (a one-l
  • 3/4 c. Buttermilk or possibly sour lowfat milk.

Directions

  1. Heat drippings in a 9" square pan in an oven that is being preheated to 350 deg. In mixing bowl combine dry ingredients. In another bowl combine the drippings, buttermilk and beaten egg and add in which to the dry ingredients. Use fork to blend well. Pour at once into the warm 9" pan previously coated with drippings. Bake at 350 for 25 minutes. If you do not have bacon drippings, you can use shortening or possibly veg. oil, but the drippings add in a lot of flavor.
