Corn Bread Salad With Lime Juice And Cilantro Recipe

  • 6 c. cooked, coarsely crumbled dry corn bread
  • 1/2 c. diced red bell pepper
  • 1/2 c. diced green bell pepper
  • 1/2 c. minced red onion
  • 1/4 c. minced fresh parsley
  • 2 Tbsp. minced fresh cilantro
  • 2 x green onions, minced
  • 2 x cloves garlic, chopped
  • 1 x (4-oz) can diced green chilies, liquid removed
  • 1 Tbsp. cumin seeds Salt and cracked black pepper
  • 3 Tbsp. extra virgin olive oil
  • 1 Tbsp. white vinegar
  • 6 Tbsp. fresh lime juice (3 to 4 limes)


  1. Combine the corn bread, bell peppers, red onion, parsley, cilantro, green onions, garlic and green chilies in a large bowl, tossing lightly. Season with the cumin seeds, salt and black pepper.
  2. In a small bowl, whisk the extra virgin olive oil, vinegar and lime juice till well-blended. Pour over the corn bread mix and toss gently to coat.
