This Beef and Mushroom Pho is just what the doctor ordered: warming, hearty, flavorful and mild at the same time.
This is a cheater pho in some ways but not in others. I just want to get that out there. And because of that I am not going to give you a formal recipe, but I will tell you what I did. It was a process over a day or two. Here’s the deal: time was not my enemy when I made this, but leaving the house was.
I have not seen a season for germs this bad in quite a while. *I* have had worse years, but across the board everyone has been sick. My kids have each missed more school than any other fall, and even John got a horrible stomach bug over the Christmas break. At least it waited until after break to hit me.

%20out%20of%20those%20bones,%20especially%20thick%20meat%20bones!%20So%20even%20though%20I%20used%20the%20stock%20to%20make%20my%20pho%20after%2024%20hours%20of%20simmering,%20I%20also%20let%20it%20cook%20another%2024%20hours%20after%20that.If%20you%20are%20going%20to%20make%20stock%20for%20soup,%20do%20I%20what%20I%20did%20and%20make%20it%20separately.%20That%20way%20you%20can%20also%20make%20it%20in%20bigger%20quantities%20and%20freeze%20some.%20My%20freezer%20is%20now%20full%20of%20containers%20of%20homemade%20beef%20stock.%3C/p%3E%3Cp%3EThe%20night%20before%20I%20was%20planning%20to%20have%20the%20pho,%20I%20also%20took%20some%20brisket%20and%20round%20steak%20out%20of%20the%20freezer.%20The%20next%20morning,%20I%20carved%20the%20bone%20in%20the%20round%20steak%20out%20and%20added%20it%20to%20the%20stock.%20I%20placed%20the%20round%20steak%20back%20in%20the%20fridge.%20Then%20I%20cut%20the%20brisket%20into%20chunks%20and%20browned%20them.%20They%20got%20added%20to%20the%20slow%20cooker%20with%20some%20of%20the%20simmering%20beef%20stock%20and%20some%20whole%20star%20anise.%20That%20cooked%20all%20day%20while%20the%20stock%20also%20continued%20to%20cook%20all%20day.%3C/p%3E%3Cp%3EAbout%20an%20hour%20before%20dinner%20I%20saut%C3%A9ed%20some%20onions,%20smashed%20garlic,%20rounds%20of%20sliced%20ginger%20and%20mushrooms,%20and%20then%20added%208-10%20cups%20of%20the%20simmering%20beef%20stock%20to%20it.%20To%20this%20I%20also%20added%20some%20fish%20sauce.%20When%20the%20brisket%20was%20ready,%20I%20added%20its%20flavorful%20cooking%20liquid%20as%20well%20(reserving%20the%20brisket,%20which%20I%20did%20not%20want%20to%20get%20tough%20from%20boiling).%20I%20brought%20this%20to%20a%20rolling%20boil%E2%80%93you%20want%20it%20boiling%20because%20that%20boiling%20liquid%20is%20going%20to%20cook%20thinly%20sliced%20round%20steak%20placed%20in%20the%20bottom%20of%20each%20bowl.%20Once%20the%20steak%20cooked,%20I%20also%20added%20noodles%20and%20brisket%20chunks.%3C/p%3E%3Cp%3EMost%20of%20you%20probably%20know%20that%20the%20key%20to%20really%20good%20pho%20is%20(in%20addition%20to%20good%20stock)%20the%20garnishes.%20Some%20I%20think%20you%20can%20get%20by%20without%20and%20some%20I%20think%20are%20non-negotiable.%20Non-negotiables%20include%20lime%20wedges;%20basil;%20cilantro%20or%20culantro%E2%80%93must%20have%20one%20of%20them;%20fish%20sauce;%20and%20for%20me%20personally%20nuoc%20cham.%20More%20on%20that%20in%20a%20minute,%20because%20I%20think%20it%20is%20unconventional.%20The%20negotiables?%20Sliced%20hot%20chili%20peppers;%20specifically%20Thai%20basil,%20bean%20sprouts;%20fresh%20mint;%20hoisin%20sauce;%20Sriracha%20sauce.%20We%20had%20most%20of%20these,%20even%20including%20some%20Thai%20basil%20from%20my%20window%20sill%20plant,%20but%20we%20did%20not%20have%20bean%20sprouts%20(was%20not%20worth%20a%20grocery%20trip%20for%20and%20I%20was%20afraid%20it%20might%20bother%20my%20stomach)%20or%20culantro%20and%20really%20we%20needed%20more%20Thai%20basil.%20We%20used%20rice%20vermicelli%20because%20that%20is%20what%20we%20had,%20but%20wider%20noodles%20are%20more%20traditional.%3C/p%3E%3Cp%3EAbout%20the%20nuoc%20cham:%20I%20have%20never%20heard%20of%20anyone%20using%20nuoc%20cham%20in%20their%20pho,%20so%20I%20honestly%20have%20no%20idea%20what%20a%20Vietnamese%20person%20would%20think%20about%20it.%20I%20was%20at%20a%20pho%20shop%202%20weeks%20ago,%20when%20I%20had%20the%20sudden%20idea%20to%20put%20Sammy%E2%80%99s%20nuoc%20cham%20that%20she%20got%20for%20her%20bun%20into%20my%20pho.%3C/p%3E%3Cp%3EGuys%20this%20was%20sheer%20genius.%20I%20have%20never%20really%20%E2%80%9Cgotten%E2%80%9D%20pho.%20Just%20like%20I%20don%E2%80%99t%20get%20chicken%20noodle%20soup.%20They%20just%20taste%20watery%20to%20me!%20And%20I%20promise%20you%20I%20have%20had%20excellent%20versions%20of%20both%20that%20everyone%20around%20me%20loved;%20this%20just%20seems%20to%20be%20a%20me%20problem.%20But%20if%20it%20is%20your%20problem%20too,%20try%20it%20with%20nuoc%20cham.%20The%20salty%20umami%20fish%20sauce%20with%20the%20sweet%20sugar%20and%20sour%20lime%20juice,%20really%20elevate%20the%20pho.%20For%20me%20anyway.%20I%20don%E2%80%99t%20want%20to%20knock%20on%20traditional%20pho%E2%80%93if%20you%20love%20it%20as%20is,%20great.%20But%20if%20not,%20try%20it!%3C/p%3E%3Cp%3EOK%20I%20just%20re-read%20this%20post%20and%20it%20is%20a%20little%20rambly,%20and%20for%20that%20I%20apologize.%20I%20need%20to%20get%20back%20into%20the%20swing%20of%20things!%3C/p%3E){kind=link}
