Directions

  1. CUSTARD FILLING: In medium saucepan heat lowfat milk slowly just till bubbles form around the edge. In small bowl, combine sugar and cornstarch, mixing well. Stir into warm lowfat milk all at once. Cook, stirring, over medium heat till mix boils. Reduce heat and simmer 1 minute. Beat a small amount of mix into egg yolks. Pour back into saucepan and cook, stirring, over medium heat till mix boils and thickens. Stir in vanilla. Place waxed paper on surface to prevent skin from forming. Chill till ready to use.
  2. Makes 3 c.. Will fill 12 eclairs.
  3. GLAZE: In top of double boiler, over warm (not boiling) water, heat chocolate with shortening. Add in corn syrup and lowfat milk. Stir till smooth and well blended. Let cold slightly. Spread glaze over eclairs.
  4. Makes 2 c..
  5. Will glaze 12 eclairs.
  6. ECLAIRS: Bring water, butter and salt to boil. Remove from heat and stir in flour. Beat over low heat till mix leaves sides of pan. Remove from heat. Beat in Large eggs, one at a time. Beat till shiny and satiny and broken in strands. Drop three inches apart on ungreased sheet. Form 12 strips 4 x 1 inches. Bake at 400F for 35 to 40 min. (Will sound hollow when tapped, keep from drafts). Slit tops of eclairs and fill with custard.
  7. Spread tops with chocolate glaze, refrigerateand serve.
  8. NOTES : I've been making these since 1973. They are wonderful.
