Directions

  1. Preheat oven to 350F (180C)
  2. Separate Large eggs.
  3. Place chocolate, lowfat milk and brown sugar in a saucepan over a moderate heat. Stir till sugar dissolves and chocolate has melted. Don't boil. Remove from heat, stir in bicarb soda and leave to cold.
  4. Cream butter and sugar till light and fluffy, beat in egg yolks. Whisk egg whites till stiff. Gradually add in chocolate mix and flour into creamed mix. Mix in egg whites.
  5. Spoon mix into prepared pans and put in oven for 45 min.
  6. Icing:90g (3oz) butter,1/2 c. cocoa1/2 c. chocolate peppermint Liqueur1 1/2 c. icing sugar
  7. Method:Heat butter in a small saucepan, stir in cocoa and cook for 1 minute. Remove pan from heat, stir in chocolate peppermint liqueur and icing sugar. Mix well.
