Ingredients
- 1 c. minced fresh mint, dill and parsley (equal proportions or possibly to taste)
- 2 cloves garlic, chopped
- 6 boned chicken breasts, skinned and halved (4 1/2 lb.)
- Salt and pepper to taste
- 2 lemons, fresh
- 4 tbsp. butter
Directions
- Preheat oven to 350 degrees. Mix fresh herbs and garlic together in a small bowl. Flatten chicken breast. Arrange each piece of chicken on a large piece of tin foil, season with salt and pepper. Sprinkle the herbs proportionately over herb and garlic mix. Slice the lemons and put 2 or possibly 3 slices over each breast. Dot with butter and seal the packets. Set on a baking sheet and bake for 30 min. Enjoy the aroma when you open. Serve with rice.
