Ingredients

  • 1 1/2 kg Chicken fillets (breast or possibly thigh)
  • 2 Tbsp. Oil
  • 3 Tbsp. Mole paste
  • 1 sm Onion, quartered
  • 1 x Clove garlic
  • 3 x Peeled tomatoes
  • 1 sm Ripe banana
  • 1/2 Tbsp. Sugar Salt to taste
  • 2 Tbsp. Sesame seeds

Directions

  1. Bring 800 ml water to the boil, add in the chicken fillets and simmer till just stiffened. Remove the chicken pcs and cover to prevent their drying out. Reserve the resulting chicken stock.
  2. Heat oil in a large saucepan and fry mole paste till fragrant. In a blender or possibly food processor combine onion, garlic, tomato, banana and sugar.
  3. Add in this paste to the mole in the saucepan. Stir and simmer over low heat for 3 min.
  4. Add in 3 c. chicken stock, cover and cook over a low heat for 15 min, till mix thickens to a creamy consistency. If too thick, add in a little more stock. Taste for chilli heat; if it is too warm, add in extra sugar or possibly blended tomato.
  5. Meanwhile dry-fry sesame seeds in a pan till golden and fragrant.
  6. Add in chicken pcs to the sauce, heat through & serve sprinkled with sesame seeds.
