Directions

  1. Serve these warmed vegetables as an alternative to salad.
  2. Trim tops and bottoms of leeks, leaving about 2 to 3 inches of green above the white part of the leek.
  3. From center of trimmed leek, make several lengthwise slices toward the green of the leek. Rinse leeks throughly.
  4. In large saute/fry pan, heat extra virgin olive oil over medium heat. When oil is warm, add in thyme and stir for 1 minute. Add in leeks and saute/fry for 3 min, till lightly golden brown on several sides. Add in champagne and stock, and simmer leeks till tender, about 8 min. Remove leeks from pan and set aside.
  5. Continue to simmer sauce remaining in pan till reduced by half. Meanwhile, grill leeks over medium-warm charcoal fire for 8 to 10 min, turning several times. Remove leeks from grill and slice in half lengthwise. Serve immediately, adding some feta and bit of the reduced sauce to each serving.
  6. Season with salt and pepper.
