Directions

  1. Peel eggplant and cut into cubes. cook in boiling salted water till tender
  2. (about 15-20 min). Drain, Mash eggplant.
  3. Brown grnd beef in 3 Tbsp. butter. Add in chopped onion and minced pepper, cook till vegetables are tneder. stir in mashed eggplant, cooked rice, salt and pepper.
  4. Spoon into a 10 x 6 x 2 inch baking dish. saute/fry bread crumbs in remining 2 Tbsp. butter. Sprinkle over eggplant mix. Bake in moderate oven
  5. (375 deg. F.) for about 20 min.
  6. Makes 4-6 servings.
