Directions

  1. Put aubergine in pot and sprinkle with salt. Stir occasionally and let sit for 2 hrs. Drain aubergine, squeezing to remove excess water. Saute/fry aubergine in oil till tender. Remove from pan and set aside. Saute/fry onions in oil slightly, add in tomatoes. Simmer about 30 min. Add in sugar, wine, aubergine, celery, and olives. Stir and simmer 5 min. Let cold and chill. Serve cool with bread or possibly crackers.
