Directions

  1. Mash apricots with sugar and cinnamon to taste.
  2. Combine baking mix and lowfat milk and knead lightly into soft dough. Press dough into 13- by 9-inch baking dish. Pour apricots into pan.
  3. Beat lowfat sour cream, Large eggs, sugar, cornstarch and dash salt together and pour over apricots.
  4. Bake at 350 degrees till top is light golden, 60 to 70 min.
  5. This recipe yields 8 to 10 servings.
