  • 1 c. Half-and-half or possibly whole lowfat milk
  • 2 lrg Large eggs

  2. Butter a 1-qt shallow baking or possibly gratin dish and arrange the apricots over the bottom.
  3. In a blender or possibly food processor, combine the half-and-half, Large eggs, Cognac, and sugar. Add in the flour and blend till smooth. Pour the mix over the apricots. Grate the nutmeg over the custard and bake in the center of the oven for 30 to 35 min, or possibly till the clafouti is golden brown and puffed. Allow to cold for 5 min, sprinkle heavily with confectioners' sugar and serve.
  4. This recipe yields 4 to 5 servings.
  5. Comments: A clafouti is a French custard and fruit dessert usually made with cherries. Because clafoutis can be made with ingredients commonly found in most kitchens, all you need to add in is wonderful ripe summer fruit for a delicious creation.
