Anchovy Relish Over Toast Recipe

Ingredients

  • 1/2 can flat anchovies packed in oil (3-oz)
  • 1/2 Tbsp. extra virgin olive oil
  • 1/2 c. pitted Nicoise Kalamata or possibly other ripe olives
  • 1 Tbsp. chopped chives
  • 1 tsp small capers
  • 1 tsp lemon juice Freshly grnd pepper
  • 6 x thin slices French bread toasted, optional

Directions

  1. In food processor, combine anchovies, oil, olives, chives, capers, lemon juice and pepper to taste. Process till mix is finely chopped. Spread on toasted French bread.
  2. Makes 2 servings.
  3. Served with Braised Radicchio
