  1. CAKE: Mix flour and sugar. Add in shortening, lowfat milk and large eggs and mix well. Add in vanilla. Spoon 4 tbsp of batter into pan/skillet and bake at 350 degrees till layers brown around edges.FILLING: Mix all ingredients. Bring to a boil, stirring occasionally. Reduce heat and simmer till filling sets when cool.
