Ingredients
- 3 med. sweet potatoes
- 1 c. sugar
- 1 dash of nutmeg
- 1/2 c. lowfat milk
- 1 stick butter (no butter)
- 3 Large eggs, well beaten
- 1 teaspoon vanilla flavoring
- 1 frzn 9 inch pie crust
Directions
- Wash and boil potatoes till soft and tender. Drain, add in cold water. Peel potatoes and add in butter. Mash and cream butter and potatoes together. Add in sugar and stir. Beat Large eggs and add in to mix. Slowly add in lowfat milk while continuing to stir. Add in vanilla and nutmeg. Stir till consistency is smooth. Place in oven at 375 degrees till brown (usually 8 to 10 min).
