Try this refreshing tomato onion salad. It's perfect during the summer months. It's also very healthy and light unlike other salads with heavier dressings. The dressing is a basic olive oil and lemon mix. To add some kick, add chopped jalapenos!
Ingredients
- 4 Large Tomatoes
- 1 Large Red Onion or any onion of your choice
- Extra Virgin Olive Oil
- 1 Lemon, Juiced
- Chopped Parsley
- Salt to taste
- Jalapeno (optional)
Directions
- *Wash and cut the tomatoes (see picture above)
- *Thinly slice the onions
- *Chop less than a handful of parsley; you'll need just enough to sprinkle it on top
- *Drizzle olive oil and lemon juice
- *Salt to Taste
- *Add the chopped jalapenos, if desired, and mix
