  • 1 x English cucumber or possibly two small regular cucumbers
  • 3 Tbsp. red wine vinegar
  • 2 pkt sugar substitute
  • 1/2 tsp salt plus more to taste
  • 2 sm tomatoes seeded, and coarsely minced
  • 1/2 c. minced green onions
  • 1/4 c. minced fresh mint
  • 2 Tbsp. extra virgin olive oil Freshly-grnd black pepper to taste


  1. Peel cucumber, cut in half lengthwise and scoop out seeds with a small spoon. Cut cucumber into 1/2-inch slices and transfer to a large serving bowl. Toss with vinegar, sugar substitute and salt. Let sit 30 min.
  2. Add in tomatoes, green onions, mint and extra virgin olive oil to bowl. Gently mix to combine all ingredients. Season to taste with additional salt and pepper.
  3. This recipe yields 4 servings.
