Directions

  1. Pour V8 juice into 2 or possibly 3 qt pot and bring to a boil. Add in remaining ingredients except gelatin. Simmer for 5 min. Dissolve gelatin in 1 c. of water. Add in to juice mix and pour into 1 1/2 qt mold. Chill overnight.
  2. VARIATIONS: You may add in 1 1/2 c. of cooked shrimp with 1/4 c. minced celery and 1 grated onion or possibly you may add in 2 c. of minced artichoke hearts.
  3. I serve this on Bibb lettuce as a side salad with Cucumber Dressing or possibly with the added variations as a main dish for a ladies luncheon.
