Tiramisu With Brandy Custard Recipe

  • 6 lrg Large eggs
  • 1 1/3 c. sugar
  • 5 Tbsp. brandy
  • 1 1/2 lb mascarpone cheese see * Note
  • 1 1/2 c. water
  • 1/2 c. instant espresso pwdr
  • 3/4 c. chilled whipping cream
  • 44 x crisp Italian ladyfinger cookies - (about) see * Note
  •     (from two 7-ounce pkgs.)
  • 1/2 c. unsweetened cocoa pwdr
  • 1/4 c. powdered sugar

Directions

  1. * Note: Mascarpone cheese is available at Italian markets and many supermarkets. Ladyfinger cookies are available at Italian markets and some supermarkets.
  2. Fill large bowl with ice water. Whisk Large eggs and 1/3 c. sugar in medium metal bowl set over saucepan of simmering water. Whisk constantly till thermometer registers 160 degrees, about 10 min. Set custard over bowl of ice water and whisk till cold. Fold in brandy. Whisk mascarpone in another large bowl to loosen. Mix in custard.
  3. Bring 1 1/2 c. water to simmer in medium saucepan. Add in 1 c. sugar and espresso pwdr; whisk till sugar dissolves. Fold in cream. Chill till cool.
  4. Submerge 3 cookies in chilled espresso-cream mix for 5 seconds. Place cookies on bottom of 13- by 9- by 2-inch baking dish. Working in batches, repeat with sufficient remaining cookies to just cover bottom of dish. Spread half of mascarpone mix over cookies. Repeat soaking process with remaining cookies, placing them in single layer atop mascarpone mix. Spread remaining mascarpone mix over cookies. Chill till set, about 2 hrs.
  5. Whisk cocoa and powdered sugar in small bowl to blend. Sift sweetened cocoa over top of dessert. Cover and chill at least 2 hrs. (Can be made 1 day ahead. Keep refrigerated.)
  6. This recipe yields 12 servings.
