Ingredients
- 1/4 c. shredded coconut
- 2 tbsp. minced fresh coriander
- 2 tbsp. rice wine vinegar
- 2 teaspoon soy sauce
- 1 1/2 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes
- 1/2 c. peanut oil
- 1/2 head iceberg lettuce, about 2 c. shredded
Directions
- Peel and core pineapple. Cut it into slices and then into 1/2 inch wedges. Cut shrimp in half down the back. Cut pork into cubes. Combine pineapple, shrimp, pork, peanuts, coconut and coriander in a bowl. Shake vinegar, soy sauce, sesame oil and pepper in a jar. Add in peanut oil and shake again. Pour this dressing over pork mix and toss. Shred lettuce. Put on individual plates and top with pork mix.
