Thai pineapple fried rice {vegetarian} Recipe

Ingredients

  • 3 Tbsp reduced-sodium soy sauce (or fish sauce, if not vegetarian)
  • 2 tsp mild (sweet) curry powder
  • 2 tsp peanut, canola, vegetable or grapeseed oil
  • 3 cloves garlic, chopped
  • 2 large scallions, white and green parts chopped
  • 1/2 tsp dried red pepper flakes
  • 1 egg (vegans can omit)
  • 1/2 cup frozen peas
  • 1/4 cup raisins
  • 1/2 cup whole roasted, unsalted cashews
  • 3 cups cooked cold jasmine or basmati rice
  • 1-1/2 cups diced fresh pineapple
  • 1/4 cup vegetable broth (or chicken broth, if non-vegetarian)
  • 1/3 cup fresh coriander leaves (cilantro), for garnish
